Pork chops with onions, sun dried tomatoes and potatoes
Yes it’s Friday, and I am in my kitchen cooking some delicious dinner for my family and thought to share with you guys!
4 -6 pork chops
Paprika 1/2 tsp
Coarse ground pepper 1/2 tsp
Salt to taste
3 medium onions, thinly sliced
Sun dried tomatoes 5 to 6 roughly chopped
For the potatoes
Potatoes 3
Cumin powder 1/4 tsp
Red chilly flakes 1 tsp
Desiccated coconut
Salt to taste
Method
Melt butter in a pan until sizzling. Mix paprika, salt and black pepper in a small bowl. Rub evenly over both sides of pork chops and cook for 10-15 minutes turning occasionally.
Once it’s cooked, remove chops from the pan. Place onions in the same pan, fry over medium heat, stirring occasionally, 8-10 minutes or until onions are caramelized. Add sun dried tomatoes and mix well.

Return chops to the pan; continue cooking for another couple of minutes on a low heat. Keep it aside.
Meanwhile, peel and cut potatoes. Place in a large saucepan. Cover the potatoes with cold water, add salt and bring to the boil. Turn the heat down and simmer for 15 minutes, until the potatoes are cooked. You can use a fork to test to see if they are cooked enough. Drain and leave to steam dry. Now heat some oil in a pan. Add cumin powder and chilly flakes. Let the flavour infuse into the oil. Now add potatoes and mix well. Sprinkle some desiccated coconut. Serve pork with potatoes and vegetable of your choice.
